What a centrifugal juicer does to produce
A centrifugal juicer shreds produce against a fast-spinning basket — typically 6,000 to 14,000 RPM. That speed pulls a lot of air into the juice and warms it slightly through friction. Neither is dramatic on its own, but together they accelerate oxidation: the browning you see on cut apple is the same process happening to vitamin C, folate and many polyphenols in your glass.
In our own kitchen tests, a centrifugal green juice separated within 20 minutes and lost its bright colour within the hour. The same recipe cold-pressed stayed homogeneous for most of the day when refrigerated.
What cold-pressing preserves
A masticating or hydraulic press crushes slowly, then squeezes. Less air, less heat, and a noticeably higher yield from leafy greens — which matters, because greens are where most of the chlorophyll, nitrates and minerals live in our condition programs.
Published comparisons generally show cold-pressed juice retaining more vitamin C and total antioxidant capacity at 24 and 72 hours. The difference at minute zero is smaller than marketing suggests; the gap opens over storage time.
When it genuinely doesn't matter
If you drink your juice immediately, a centrifugal juicer is perfectly good — and for hard produce like beets, carrots and apples the nutritional difference is modest. Our advice: use whatever you own, juice fresh, and prioritise the ingredients over the machine.

- Add lemon — its acidity slows oxidation in any juicer
- Store cold-pressed juice in a filled, sealed glass bottle for up to 48 hours
